Baked Lemon Pudding

       Amount  Measure   Ingredient

          3/4  cup       sugar
            5  Tbl       flour
          1/4  tsp       baking powder
          1/8  tsp       salt
            2            large eggs, separated
            3  Tbl       fresh lemon juice
                         grated rind of one lemon (yellow only)
        1 1/2  Tbl       butter or margarine, melted
            1  cup       milk


Preheat oven to 375° F.

Stir 1/2 cup sugar with flour, baking powder, and salt.  Beat egg yolks
until light; add lemon juice, rind, melted butter, and milk.  Beat well
with a spoon.  Stir in dry ingredients until smooth.

Beat egg whites until foamy; gradually beat in remaining 1/4 cup sugar
until stiff but not dry.  Fold into flour mixture.

Transfer mixture to 1-quart baking dish.  Put baking dish in a larger pan
filled with warm water.  Bake at 375° F. for 40 to 45 minutes, until top
is firm and nicely browned.

Serve warm or cold.
