Carrot Cake #1

      2     cup     sifted flour
      2     tsp     baking soda
      1     tsp     baking powder
      1     tsp     salt
      2     tsp     ground cinnamon
  1 3/4     cup     sugar
      1     cup     vegetable oil
      3     large   eggs
      1     tsp     vanilla
      2     cup     shredded carrots
      1     cup     flaked coconut
      1     cup     coarsely chopped pecans
      1             can(8 1/4 ounces) crushed pineapple, drained


Cream cheese frosting

      1             3-ounce package of cream cheese
    1/4     cup     (1/2 stick) butter
      2     cup     powdered sugar
    1/2     tsp     vanilla 

Grease 9-by-13-inch baking pan, flour inside. Sift dry
ingredients and cinnamon. Add sugar, oil, eggs and vanilla.
Beat with wooden spoon. Blend in carrots, coconut flakes,
walnuts and pineapple. Pour into pan. Bake at 350 degrees
for 45 minutes. After baking, top with frosting. 

To make frosting, soften cream cheese and beat with
softened butter. Beat in sifted powdered sugar and vanilla.
Add 2 teaspoons of milk or orange juice if necessary.
