Amarillo Brisket

Total Time:  4 hours
Preparation Time:  15 minutes
Servings:  8-12

       Amount  Measure   Ingredient
       ------  -------   --------------------------------
Meat:
            4  lb        flat beef brisket
Sauce:
        1 1/2  cup       brown sugar
            1  cup       apple cider vinegar
          3/4  cup       catsup
        1 1/2  tsp       Worcestershire sauce
            1  tsp       soy sauce


Wrap beef in heavy duty foil.  Place wrapped beef in pan at
350 F for 1 hour.  Reduce heat to 300 and bake 2 more hours.


Sometime during the third hour of cooking, combine the sauce
ingredients and head until the sugar has melted.  DO NOT boil.


Unwrap beef and drain.  Move to new piece of foil, pour sauce
over, and re-wrap.  Bake 1 more hour.


When done, the beef will practically fall apart.  You can slice
it or pull it apart.  Serve with a nice green salad and some
crusty bread.
