Some African recipe sites have adapted the recipes for the "modern" kitchen, others have left the recipes in a more or less "authentic"state. The ease of obtaining some of the ingredients will probably vary considerably depending on where you live.

Recipes from Mauritius 4.0-check rating
This site looks like a winner if you're looking for an out of the ordinary recipe. There are a few recipes with hard to find ingredients (at least for some us in the Midwest) such as jackfruit and carri poulet leaves, but most of the recipes shouldn't present a problem. The multicultural heritage (Dutch, French, British plus Indian and Chinese) of this island is evident in the recipes. Recipes for crepes, chutney, spring rolls, curries, and even a Christmas pudding (microwave recipe) can be found on the site. I can't make space to write about all the interesting recipes you'll find, but I believe the heading at the top of the site page says it all -- "The most versatile cuisine in the world". The African Cookbook 4.0-check rating
Excerpts from an African cookbook. A full meal menu is presented for each of nine countries (plus the Island of Zanzibar). For each country there is a brief description of the country, a section on how dinner might be served, a presentation section for the dinner, a shopping list and recipes. The recipes are also organized by category near the bottom of the page. Some of the recipe links do not work correctly, but the recipes are there (you just have to scroll down to find them). I do not have the expertise to judge whether or not the recipes are authentic, but in the forward of the book, the recipes are said to be "... authentic, or as authentic as they need to be for American cooks. I think you'll find this site interesting. The recipes are primarily ones that originated from early settlers (English, French, German, and Malay), but there are a few "indigenous" recipes, too. There are lots of recipes here -- particularly meat recipes. The multicultural influence is obvious when you start browsing the recipes; you'll find Old Fashioned Christmas Pudding, Hot Cross Buns, and more unusual dishes such as Bobotie (curry meatloaf), Sosaties (South African kabobs), and Inyama Yenkukhu (chicken casserole). You have to do lots of scrolling to get to the recipes, but there really are some interesting ones. The recipes are classified into several categories (meat, vegies, etc.) and there is a search feature as well. (Last reviewed: 18 May 2005)
Cape Verdean Foods 2.5-check rating
There are only about a dozen recipes on this page and beware -- it's on a university site so it may vanish (at least that's been my experience). There is a meat recipe, a chicken recipe, a fish recipe, an octopus recipe, some corn/grain recipes, and some sweets. It's not an extensive collection of recipes, but I have not come across any other sites with recipes from Cape Verde. (Last reviewed: 21 Dec 2004)
Motherland Nigeria 2.5-check rating
About 40 recipes from Nigeria. Some of the recipes use hard to get ingredients, but a list of mail order/web suppliers is provided. You might find the food page link near the bottom of the main page helpful in determining what some of the recipe names mean. (Last reviewed: 21 Dec 2004)
Sierra Leonean Recipes 2.5-check rating
A half dozen recipes. Even if you can find all the ingredients such as ground egusi (although I found a recipe that said you could subsitute ground pumpkin seeds) and stockfish (whatever that is), I'm not sure how authentic the recipes are -- several of them call for "Mrs. Dash" seasoning. The Congo Cookbook 2.5-check rating
Since I last rated the site it's been moved from GeoCities to it's own domain. The load speed appears to have improved but it's so full of ads and pop up windows that I've downgraded the rating from 3.5 to 2.5. Recipes are categorized by country & region as well as by ingredient; the recipes are clear and detailed. There is lots of interesting art work on the site too! The site name is a bit deceiving, since there are actually recipes from all over Africa (sub-Saharan, eastern, central, western). (Last reviewed: 21 Dec 2004)

A promotional site of sorts, but they do have links to many recipes from Algeria to Zimbabwe. The recipes are links to other sites and many of them are broken, but there is a wide range to look at.
